7) Harvesting your lemongrass

To harvest lemongrass, cut off the bottom leaves and then use a sharp knife to slice the stalk down to the base. Then, remove the outer layer which until only the white pith remains. Finally, peel away the tough skin with your fingers. Remove the dry outer leaves.
